Chardonnay - BilanciaIn the glass, Bilancia’s Chardonnay displays a dense golden-yellow color. This varietal New Zealand wine presents wonderfully youthful and fragrant notes of pear, apple, lemon, and mirabelle in the glass. These are joined by hints of additional fruits. On the palate, Bilancia’s Chardonnay opens wonderfully aromatic, fruit-driven, and balanced. There is dry and really dry. This white wine belongs to the latter group, as it was vinified with just 0.1 g of residual sugar. On the tongue, this powerful white wine is characterized by an exceptionally silky texture. Thanks to its well-balanced acidity, the Chardonnay caresses the palate with a pleasant feel, without lacking juicy liveliness. On the finish, this wine from the New Zealand North Island winegrowing region ultimately delights with considerable length. Once again, nuances of grapefruit and pear emerge. In the aftertaste, mineral notes from the gravel-dominated soils are added. Vinification of Bilancia Chardonnay This white wine clearly focuses on a single grape variety, namely Chardonnay. Only first-class grapes were used for this wonderfully powerful varietal wine from Bilancia. On New Zealand’s North Island, the vines that produce the grapes for this wine grow on gravel soils. The moderating influence of the nearby river allows the grapes to ripen more slowly and develop greater aromatic complexity. When perfectly ripe, the grapes for the Chardonnay are harvested exclusively by hand, without the use of coarse, less selective harvesting machines. After the harvest, the grapes are quickly taken to the press house. There they are selected and gently crushed. This is followed by fermentation in small oak barrels at controlled temperatures. After fermentation is complete, the powerful Chardonnay is aged for a further 11 months in French oak barriques. Food recommendation for Bilancia Chardonnay This New Zealander is best enjoyed moderately chilled at 11–13°C.
