In the aftertaste, mineral notes from the soils dominated by sand and marl come through. Winemaking of the M. Chapoutier Gigondas This powerful red wine from France is made from the grape varieties Cinsault, Grenache, Mourvèdre, and Syrah cuvée. The grapes grow under optimal conditions in the Rhône Valley. The vines here root deeply in soils composed of clay, sand, limestone, and marl. The Gigondas is an old-world wine through and through, as this Frenchman exudes an extraordinary European charm that clearly underscores the success of wines from the Old World. When physiological ripeness is achieved, the grapes for the Gigondas are harvested exclusively by hand without the help of coarse and less selective grape harvesters. After manual harvest, the grapes are quickly transported to the winery. They are sorted and gently crushed. This is followed by fermentation in stainless steel tanks and large wooden vessels at controlled temperatures. The fermentation is followed by aging for several months on the fine lees before the wine is finally bottled. Food pairing recommendations for M.
