Vinification of Guido Gualandi Il Pugnale The basis for the balanced Il Pugnale from Italy is grapes from the Foglia Tonda and Cabernet Sauvignon varieties. After being harvested by hand, the grapes make their way to the press house as quickly as possible. There they are sorted and gently crushed. Fermentation then takes place in small and large wooden barrels at controlled temperatures. After fermentation, the wine matures for several months in barriques made of oak.
