In Trentino-Alto Adige, the vines that produce the grapes for this wine grow on limestone soils. After the grape harvest, the grapes quickly make their way to the winery. There they are sorted and gently crushed. Fermentation then takes place in stainless steel tanks at controlled temperatures. After fermentation has finished, the Negrara can continue to harmonize for several months on the fine lees.
