Vinification of the Marqués de Riscal Próximo This balanced red wine from Spain is vinified from the Cariñena, Graciano and Tempranillo grape varieties. In La Rioja, the vines that produce the grapes for this wine grow on soils of limestone. After the manual harvest, the grapes immediately enter the press house. Here they are sorted and carefully crushed. Fermentation follows in stainless steel tanks at controlled temperatures. Vinification is followed by aging on the fine lees for several months before the wine is finally drawn into bottles. Food recommendation for the Próximo of Marqués de Riscal This Spanish red wine is best enjoyed tempered at 15 - 18°C. It is perfect as an accompaniment to veal boiled beef with beans and tomatoes, chickpea curry or vegetable stew with pesto.
