The vines root deeply in gravelly, sandy and partly calcareous soils. These soils deliver low yields but very aromatic grapes. Dry climate and clear Andean air promote fully ripe berries with intense colour and dense structure. Malbec forms the basis and provides dark fruit, volume and velvety tannins. Bonarda contributes juiciness, fresh acidity and red fruit accents. Petit Verdot sets a distinctive accent with structure, colour density and subtle spice. Harvesting takes place in ripe lots in order to pick each variety at its optimal aromatic window. Selective harvesting in the vineyard and in the cellar ensures only aromatic grapes. In the cellar, gentle processing follows in order to preserve freshness and varietal typicity. The grapes are destemmed and gently crushed. A short cold maceration before fermentation extracts the first colour and aromas from the berry skins. Alcoholic fermentation takes place in temperature-controlled stainless steel tanks. This keeps the fruit clear and precise, while the tannins appear fine and ripe. During fermentation, the cellar masters regularly punch down the cap.
