In the vineyards, the three classic grape varieties Chardonnay, Pinot Meunier and Pinot Noir thrive, carefully tended and harvested exclusively by hand in order to process only ripe grapes. Harvesting usually takes place early in the morning to preserve optimal freshness. After selecting the best grapes, vinification begins with gentle pressing, during which, for rosé, the color compounds are slowly extracted through a short maceration time. In this way, the sparkling wine obtains its characteristic rosé color and fine red-berry aromas. The base wines then mature in stainless steel tanks and partly in traditional oak barrels in order to develop different flavor components. The cuvée of Chardonnay, Pinot Meunier and Pinot Noir is assembled with expertise to achieve a perfect balance between fruit, acidity and sweetness. The second fermentation, which gives the wine its fine mousse, takes place in the bottles after the addition of yeast and sugar.
