Vinification of Sassotondo Ombra Blu The basis for the first-class and wonderfully powerful Ombra Blu cuvée from Sassotondo is Sangiovese, Merlot, and Teroldego grapes. After being harvested by hand, the grapes are quickly brought to the press house. There, they are selected and gently crushed. Fermentation then takes place in stainless steel tanks at controlled temperatures. After it has finished, Ombra Blu is allowed to further harmonize on the fine lees for 12 months.
