The Aszú berries often rest briefly afterward to further intensify the aromas. In the cellar, the Aszú berries are processed gently. Traditionally, the winemakers soak the berries in a base wine or must, extracting sugar and aromas. After extraction, fermentation is carefully controlled to bring the intense sweetness into harmony with the acidity. Aging begins in stainless steel tanks, where the young wine undergoes its first clarification and preserves freshness.
