Vinification of Les Jamelles Viognier The vines grow in the Hérault area and in the upper Aude Valley (South Minervois) and are rooted in calcareous soils rich in pebbles. In the early morning hours, the grapes are harvested and immediately taken to the wine cellar of Les Jamelles. There, the must is fermented at a controlled temperature in stainless steel tanks. Afterwards, this wine is left on the fine lees for a few months.
