This wine shines in a bright straw yellow with greenish reflections in the glass. The nose reveals a wonderful varietal bouquet. Vinification of the Lagar de Cervera Albarino The Albarino grapes grow in the vineyards in O Rosal and Cambados (D.O. Rias Baixas). The grapes are harvested by hand and immediately taken to the Lagar de Cervera winery. There the grapes are selected and de-stemmed. The grapes are then cooled to 10 degrees Celsius and macerated for 10 hours. The grapes are then gently pressed and the must is fermented in stainless steel tanks. This wine is aged on its lees until bottling.
