There they are sorted and gently crushed. This is followed by fermentation in stainless steel tanks at controlled temperatures. Vinification is followed by aging on the fine lees for several months before the wine is finally drawn off. It is perfect as a companion to boiled veal topside with beans and tomatoes, boeuf bourguignon or vegetable couscous with beef meatballs.
