Vinification of Sauvignon Blanc by José Pariente The basis for the balanced Sauvignon Blanc from Castilla y León is grapes of the Sauvignon Blanc variety. In Castilla y León, the vines that produce the grapes for this wine grow on limestone and gravel soils. After the grape harvest, the grapes are swiftly brought to the winery. There they are sorted and gently crushed. This is followed by fermentation in stainless steel tanks at controlled temperatures. Vinification is followed by maturation for several months on the fine lees before the wine is finally bottled.
