In the afterglow, mineral notes from the clay-dominated soils join in. Winemaking of Maixei Dolceacqua The basis for the balanced Dolceacqua from Liguria is grapes from the Tibouren variety. In Liguria, the vines that produce the grapes for this wine grow on clay soils. At the optimal ripeness, the grapes for the Dolceacqua are harvested exclusively by hand, without the aid of strenuous and minimally selective machinery. After harvest, the grapes are immediately taken to the cellar, where they are sorted and gently crushed. Subsequently, fermentation takes place in stainless steel tanks at controlled temperatures. After fermentation, the Dolceacqua can refine further on the fine lees for several months.
