In the aftertaste, mineral notes from the slate- and gravel-dominated soils also join in. Vinification of Care Family Vineyards Garnacha Nativa The powerful Garnacha Nativa from Spain is a varietal wine made from the Garnacha grape variety. The grapes grow under optimal conditions in Aragón. Here, the vines drive their roots deep into soils of limestone, slate and gravel. When perfectly ripe, the grapes for the Garnacha Nativa are harvested exclusively by hand, without the use of coarse and less selective mechanical harvesters. After hand-picking, the grapes are brought to the press house as quickly as possible. There they are selected and gently crushed. Fermentation then takes place in small wooden vats at controlled temperatures. Fermentation is followed by 8 months of aging in oak barriques. It is perfect as an accompanying wine to cod with cucumber-mustard vegetables, spaghetti with caper-tomato sauce, or boiled veal topside with beans and tomatoes.
