Only the very best wines are named Jaspis – after a gemstone commonly found in our vineyards. The Jaspis Pinot Noir comes from vineyards with Jura limestone soils. The vines were planted between 1958 and 1965 and represent various Freiburg clones. The vinification of this wine involves spontaneous fermentation with a maceration period of six to eight weeks. Aging takes place on the lees for approximately 20 months. No fining agents or filtration techniques are used. After bottling, the wine ages for a further 2.5 years in the bottle. The Jaspis Pinot Noir is a complex wine with outstanding balance and a long finish. Although it is rich and full-bodied, it exhibits no fattiness.
