As one would of course expect from an icon wine segment, this Chilean wine charms, despite all its dryness, with the finest balance. Excellent flavor does not necessarily require sugar. This dense and velvety red wine presents itself on the palate as balanced and multi-layered. On the finish, this matured wine from the Valle Central wine-growing region finally impresses with considerable length. Once again, hints of Mon Chéri cherry and blueberry appear. In the aftertaste, mineral notes from the soils dominated by volcanic rock and sand join in. Vinification of Manso de Velasco Cabernet Sauvignon by Miguel Torres Chile The basis for the well-balanced Manso de Velasco Cabernet Sauvignon from Valle Central is grapes of the Cabernet Sauvignon variety. The grapes grow under optimal conditions in Valle Central. Here, the vines sink their roots deep into soils of sand and volcanic rock. Once perfectly ripe, the grapes for Manso de Velasco Cabernet Sauvignon are harvested exclusively by hand, without the use of coarse and less selective mechanical harvesters. After hand-picking, the grapes are immediately brought to the winery, where they are sorted and gently crushed. Fermentation in small wooden barrels at controlled temperatures follows. After fermentation, the wine matures for 18 months in French oak barrels.
