Vinification of the Riesling from Ökonomierat Rebholz The basis for the elegant Riesling from the Pfalz is grapes of the Riesling variety. The grapes grow under optimal conditions in the Pfalz. Here, the vines drive their roots deep into sandstone soils. When they are perfectly ripe, the grapes for the Riesling are harvested exclusively by hand without the help of rough and less selective machinery. After the harvest, the grapes are brought to the winery as quickly as possible. There they are sorted and gently crushed. Fermentation then takes place in stainless steel tanks at controlled temperatures. Vinification is followed by maturation on the fine lees for several months before the wine is finally racked. Food recommendation for the Riesling from Ökonomierat Rebholz This white wine from Germany is best enjoyed moderately chilled at 11 - 13°C. It is perfect as an accompanying wine to fried trout with ginger-pear, fruity endive salad or asparagus salad with quinoa.
