Vinification of the Syrah from Bilancia This well-balanced red wine from New Zealand is vinified from the Syrah grape variety. The grapes grow close to the river on New Zealand’s North Island. Here, the vines sink their roots deep into gravel soils. Due to the balancing influence of the nearby river, the grapes ripen more slowly and develop greater aromatic complexity. Once perfect physiological ripeness is ensured, the grapes for the Syrah are harvested exclusively by hand, without the use of rough and less selective mechanical harvesters. After harvesting, the grapes reach the winery as quickly as possible. There they are selected and gently crushed. This is followed by fermentation in small wooden barrels at controlled temperatures. After fermentation, the wine is matured for several months on the fine lees before it is finally drawn off.
