Vinification of Torre Fornello Zu The powerful Zu from Italy is a cuvée, organically produced from the grape varieties Cabernet Sauvignon and Cuvée. In Emilia-Romagna, the vines that produce the grapes for this wine grow on clay soils. After hand-picking, the grapes are brought to the press house as quickly as possible. There they are sorted and gently crushed. This is followed by fermentation in stainless steel tanks at controlled temperatures. After fermentation, the wine is aged for several months on the fine lees before it is finally drawn off.
