Here, the vines dig their roots deep into soils of limestone and marl. After harvesting, the grapes are quickly taken to the press house. Here they are sorted and carefully broken up. Fermentation follows in small wood at controlled temperatures. At the end of fermentation, the Rully Blanc is aged for several months in oak barrels.
