The finish of this matured red wine from the Sud-Ouest region, more precisely from Cahors, finally captivates with a beautiful reverberation. The aftertaste is also accompanied by mineral facets from the gravel-dominated soils. Vinification of Château de Mercuès Icône The basis for the powerful Icône from France is grapes of the Malbec variety. The grapes grow under optimal conditions in Sud Ouest. Here, the vines drive their roots deep into gravel soils. The Icône is clearly also shaped by the climatic and stylistic factors of Cahors. This Frenchman can, in the best sense of the word, be described as an Old World wine that presents itself as exceptionally distinguished and complex. After hand-picking, the grapes are brought to the press house as quickly as possible. There they are sorted and gently crushed. Fermentation then takes place in small wooden barrels and amphorae at controlled temperatures. After fermentation is complete, the powerful Icône is matured for several months in oak barriques.
