After the hand harvest, the grapes are immediately taken to the winery. Here they are selected and carefully crushed. Then fermentation takes place in stainless steel tanks at controlled temperatures. After the completion of fermentation, the Petit Chablis Dame Nature can further harmonize for 6 months on the fine lees....
