The aftertaste is also accompanied by mineral facets from the limestone-dominated soils. Vinification of Clos de la Roche Grand Cru by Louis Jadot The basis for the well-balanced Clos de la Roche Grand Cru from Burgundy is grapes of the Pinot Noir variety. In Burgundy, the vines that produce the grapes for this wine grow on limestone soils. It is obvious that Clos de la Roche Grand Cru is also shaped by the climatic and stylistic factors of Côte de Nuits and Hautes-Côtes de Nuits. This French wine can quite literally be described as an Old World wine that presents itself in an exceptionally impressive manner. When perfect physiological ripeness is ensured, the grapes for Clos de la Roche Grand Cru are harvested exclusively by hand, without the aid of coarse and non-selective machinery. After the harvest, the grapes are brought to the winery as quickly as possible. There they are sorted and gently crushed. Fermentation then takes place in stainless steel tanks and small wooden barrels at controlled temperatures. After fermentation is complete, Clos de la Roche Grand Cru can continue to harmonize on the fine lees for 18 months. It is perfectly suited as an accompaniment to stuffed bell peppers, pumpkin casserole or duck breast with sugar snap peas.
