The Oltrenero dell'Oltrepò Pavese Brut Classic Method sparkling wine is produced with 100% Pinot Noir grapes. The grapes are harvested by hand in small crates to ensure the integrity of the fruit and the quality of the free-run must. The wine is made using the classic method, with gentle pressing, fermentation in stainless steel, and subsequent secondary fermentation in the bottle. The wine ages on the lees for a prolonged period, which contributes to the development of aromatic complexity and the finesse of the perlage. It has a pale straw yellow color, with a soft foam and a very fine, persistent perlage. On the nose, it offers a broad aroma reminiscent of bread crust, accompanied by mineral, floral notes, and hints of small red fruits. The palate is bold, fresh, and savory, finishing with sensations consistent with the bouquet. Perfect with fine cured meats, risottos, seafood dishes, sushi and delicate pasta dishes.
