Il Bianco di Bellona is a white wine from Tenuta Cavalier Pepe, made from Coda di Volpe grapes cultivated in the hillside vineyards located between the towns of Luogosano and Sant’Angelo all’Esca, in Campania, at altitudes between 300 and 490 meters above sea level. The clay-sandy soils with volcanic elements contribute to giving the wine balance and typical character.The grapes are harvested and selected in the vineyard, then gently pressed whole; the free-run must is clarified at low temperature and fermentation takes place at a controlled low temperature to preserve the aromatic component, followed by aging on fine lees and further maturation in bottle.It has a bright, crystalline straw-yellow color; on the nose it expresses a fruity bouquet with notes of yellow peach, pineapple, and banana, accompanied by hints of aromatic herbs; on the palate it is intense, deep, and persistent, with a well-balanced structure.It pairs perfectly with fish dishes, light preparations, fresh cheeses, and delicate recipes.
