Valentin Leflaive's Champagne Blanc de Blancs Grand Cru Avize is made from Chardonnay grapes sourced from the village of Avize, in the heart of the Côte des Blancs. The vineyards, situated on outcropping chalk soils and with a southeast exposure, give the wine a pronounced minerality and a refined expression of its terroir.The harvest is done by hand and followed by fractional pressing to select the finest components of the must; fermentation takes place in steel tanks with the addition of a portion of reserve wines, while the long ageing on the lees helps develop complexity, balance, and finesse.It displays a brilliant golden yellow color and fine effervescence; the nose is rich and delicate with notes of citrus fruits such as lemon and grapefruit, which evolve towards floral hints and subtle chalky nuances; on the palate, it is precise and intense, with a pleasant mineral tension and a long, saline finish.Ideal in combination with refined fish dishes, shellfish, and gourmet preparations.
