The Champagne Blanc de Blancs Grand Cru Cramant by Valentin Leflaive is made from Chardonnay grapes sourced from the village of Cramant, in the Côte des Blancs. The vineyards, located at about 210 meters above sea level on clay-limestone soils with a strong presence of chalk and an east and southeast exposure, impart elegance, finesse, and a marked minerality to the wine.The harvest is manual and followed by fractional pressing that allows only the noblest parts of the must to be selected; fermentation takes place both in steel and in oak barrels, while the subsequent long ageing on the lees contributes to developing complexity, structure, and harmony.It displays a golden color with greenish highlights; on the nose, it is fine and delicate with notes of peach, pear, and nuts such as almond and roasted hazelnut; on the palate, it is elegant and enveloping, with a creamy texture and a mineral finish characterized by slight saline notes.Ideal when paired with refined dishes based on fish and shellfish such as scallops and delicate preparations.
