Vinification of Farnese Vini Fantini Sangiovese The elegant Fantini Sangiovese from Italy is a single-varietal wine made from the Sangiovese grape variety. After harvesting, the grapes are quickly brought to the winery. There they are selected and gently crushed. Fermentation then takes place in stainless steel tanks at controlled temperatures. Vinification is followed by several months of ageing on the fine lees before the wine is finally bottled. It pairs perfectly as an accompaniment to duck breast with sugar snap peas, braised chicken in red wine or boiled veal topside with beans and tomatoes.
