Vinification of the Attems Pinot Grigio Venezia Giulia The well-balanced Pinot Grigio Venezia Giulia from Italy is a single-varietal wine made from the Pinot Grigio grape variety. The grapes grow under optimal conditions in Friuli-Venezia Giulia. Here, the vines sink their roots deep into clay soils. After harvesting, the grapes are brought to the press house as quickly as possible. There they are selected and gently crushed. Fermentation then takes place in stainless steel tanks at controlled temperatures. After fermentation, the wine is matured for several months on the fine lees before it is finally bottled. It pairs perfectly as an accompanying wine with leek soup, omelet with salmon and fennel, or asparagus salad with quinoa.
