The winemaker Julio Sáenz draws on the Martelo, Camino de la Iglesia and Las Cuevas vineyards for the Martelo Reserva. Carefully hand-picked, the grapes are immediately taken to the winery of Torre de Oña. There, the grapes are first destemmed, crushed and cold macerated at a temperature of 10 degrees Celsius for 9 days. Then starts the alcoholic fermentation followed by a 96-day malolactic fermentation with weekly bâttonage in American and French oak. Finally, this wine rounds off harmoniously for 24 months in French and American oak barrels.
