To the nose, this Bodegas Borsao red wine presents all sorts of black currants, morello cherries, plums, black cherries and blueberries. As if that wasn't already impressive, the aging in large wooden barrels adds other aromas such as vanilla, dark chocolate and cocoa bean. The Bodegas Borsao Cabriola presents itself to the wine drinker wonderfully dry. This red wine never shows itself coarse or meager, but round and smooth. On the palate, the texture of this powerful red wine is wonderfully dense. Due to the balanced fruit acidity, the Cabriola flatters the palate with a velvety feel, without lacking freshness at the same time. In the finish, this mature red wine from the wine-growing region of Aragon finally inspires with beautiful length. There are again hints of blackberry and black currant. In the aftertaste, mineral notes of the soils dominated by clay and limestone are added. Vinification of Bodegas Borsao Cabriola The basis for the powerful Cabriola from Aragon are grapes from the Garnacha and Syrah varieties. In Aragon, the vines that produce the grapes for this wine grow on soils of clay and limestone. After the manual harvest, the grapes are quickly taken to the press house. Here they are selected and carefully broken up. Fermentation follows in stainless steel tanks and large wood at controlled temperatures. Fermentation is followed by 12 months of aging in French and American barrels. Food recommendation for Bodegas Borsao Cabriola This Spanish wine is best enjoyed at a temperature of 15 - 18°C. It is perfect to accompany roasted calf's liver with apples, onions and balsamic vinegar sauce, goose breast with ginger red cabbage and marjoram or lamb stew with chickpeas and dried figs.
