Collazzi Toscana IGT Rosso 0,75 ℓ

Collazzi is a red wine produced in Tuscany and composed of a blend of Cabernet Sauvignon, Cabernet Franc, Merlot and Petit Verdot. The vineyards are located in the most north-western part of the municipality of Impruneta (Florence), in the hamlet of Galluzzo, in a position that guarantees a warm and dry microclimate, favoring complete ripening of the grapes. The harvest is manual and takes place in small boxes to avoid breaking the grapes. Each variety and parcel is harvested and vinified separately. The vineyards, located a short distance from the cellar, allow very short times between harvest and processing. The bunches are carefully selected on a sorting table, manually eliminating unsuitable berries. The alcoholic fermentation takes place at a controlled temperature of around 25°C, carried out in barriques, followed by malolactic fermentation. The refinement lasts 18 months in barrique and 6 months in the bottle. The color is intense red. On the nose you can perceive spicy balsamic notes accompanied by hints of ripe black fruit. On the palate it is silky and persuasive, enveloping, with a finish that expresses roundness and elegance, the result of a perfectly balanced structure. It pairs perfectly with red meat dishes, roasts and mature cheeses.
