In Baccinello, the vineyards are located at about 350 m a.s.l. on soils rich in alluvial pebbles and mainly calcareous clays, elements that enhance structure and flavour persistence. In Alberese, the vineyards are just a few kilometres from the sea, on mainly sandy and silty soils, lighter and influenced by the marine proximity, which contributes to a more dynamic and smooth profile.How is it producedHarvesting is manual, with grape bunches collected according to their ripeness. The grapes macerate on the skins for about two weeks, gradually extracting colour and phenolic compounds. Fermentation takes place in stainless steel at controlled temperature, to precisely manage the process and the aromatic component. After fermentation, the wine remains in steel also for maturation, with no declared wood ageing. Since 2009, the company has operated under organic farming practices.Tasting notesTo the eye, it displays a ruby red colour with violet hues. On the nose, it presents aromas of cherry, blackberry and blueberry, followed by dark spicy notes. On the palate, it is well structured, with smooth tannins and a steady progression. The finish is persistent, in line with the fruity and spicy character perceived on the nose.Food pairingsThanks to its structure and smooth tannic texture, it pairs easily with flavourful main courses and richly prepared dishes. It is ideal with tagliatelle al ragù, complementing the meaty component and aromatic character of the sauce without overpowering them. It also works well with legume soups, where its persistence matches the sweetness of the pulses and its spiciness provides a natural counterpoint.
