The Demetra Senza Solfiti Aggiunti by Mirabella is a Franciacorta Brut Nature made exclusively from hand-selected Chardonnay grapes from the estate's vineyards. The fluvial-glacial and deep morainic terroir enhances the freshness and finesse of this sparkling wine, ensuring an authentic expression of the territory. The winemaking process includes a rigorous selection of the bunches, gentle pressing with limited yields, and the use of only free-run juice. Fermentation occurs in stainless steel at a controlled temperature without any addition of sulfites at any stage of the process. The long aging of at least 24 months on the lees in the bottle enhances complexity and structure while preserving the wine's purity. Visually, it presents an elegant straw yellow color with greenish reflections. The bouquet is fresh and refined, with notes of elderflower, golden apple, and bergamot zest, enriched by delicate hints of rhubarb and star anise.
