After a gentle crushing, fermentation takes place in stainless steel vats at controlled temperature, with maceration lasting about 25 days. This is followed by 30 months of maturation in oak barrels and a further 12 months in the bottle, to integrate structure and aromatic profile before release.Tasting notesIn the glass, it shows an intense ruby red color. On the nose, you can perceive notes of violet, red fruits, cocoa, and licorice, in a clear and progressive bouquet. On the palate, it's elegant and fresh, with a complex tannic structure supporting the sip and leading to a pleasantly persistent finish.Food pairingIt naturally accompanies game and braised meats at the table, where structure and tannin support rich dishes and long cooking times.
