Fermentation takes place in stainless steel at a controlled temperature of 28°C. A portion undergoes malolactic fermentation in oak barrels, while the ageing process continues for 16 months in French oak barriques, 80% of which are new wood. This process develops notes of vanilla and spices and stabilizes the tannic texture.Tasting notesIntense ruby red in colour with violet highlights.
