Vinification of the Auxerrois by Kesselring This white wine is clearly focused on a single grape variety, namely Auxerrois. For this wonderfully balanced varietal wine from Kesselring, only immaculate grape material was used. After the harvest, the grapes are brought to the press house as quickly as possible. There, they are sorted and gently crushed. Fermentation then takes place in stainless steel tanks at controlled temperatures. After fermentation is complete, the Auxerrois can continue to harmonize on the fine lees for several months. Food recommendation for Kesselring Auxerrois This German wine is best enjoyed well chilled at 8 - 10°C. It is a perfect companion to potato pan with salmon, leek tortilla or vegetable stew with pesto.
