Vinification of the Calmel & Joseph Minervois The powerful Minervois from France is a cuvée, made from the grape varieties Grenache and Syrah. In Languedoc, the vines that produce the grapes for this wine grow on soils of sandstone and clay. After the grape harvest, the grapes reach the press house by the fastest route. Here they are selected and carefully crushed. Then fermentation takes place at controlled temperatures. The vinification is followed by a maturation . It is perfect as an accompaniment to stuffed peppers, lamb stew with chickpeas and dried figs or braised chicken in red wine.
