On New Zealand's South Island, the vines that produce the grapes for this wine grow on clay and gravel soils. When perfect physiological ripeness is ensured, the grapes for the Westhaven Reserve Pinot Noir are harvested exclusively by hand without the help of coarse and barely selective grape harvesters. After harvesting, the grapes are quickly transported to the winery. Here they are sorted and carefully broken up. This is followed by fermentation in small oak barrels at controlled temperatures. At the end of this process, the elegant Westhaven Reserve Pinot Noir is matured for 15 months in French oak barrels.
