Vinification of Quota 101 Garganega The foundation for this balanced Garganega from Veneto is grapes of the Garganega variety. The grapes grow under optimal conditions in Veneto. Here, the vines sink their roots deep into soils of clay and limestone. After being harvested by hand, the grapes are immediately brought to the winery. There they are sorted and gently crushed. This is followed by fermentation in stainless steel tanks at controlled temperatures. After it is complete, the Garganega can continue to harmonize on the fine lees for several months.
