Only first-class grapes were used for this exceptionally powerful varietal wine from Neil Ellis. After the harvest, the grapes are brought to the press house as quickly as possible. There they are selected and gently crushed. Fermentation in small oak barrels at controlled temperatures follows. After fermentation is complete, the Cabernet Sauvignon Stellenbosch is matured for another 18 months in French oak barrels.
