Vinification of Quota 101 Ortone Colli Euganei The basis for the powerful Ortone Colli Euganei from Veneto is grapes from the Cabernet Franc, Cabernet Sauvignon and Merlot varieties. In Veneto, the vines that produce the grapes for this wine grow on clay and limestone soils. After being harvested by hand, the grapes are quickly brought to the press house. There they are selected and gently crushed. Fermentation then takes place in stainless steel tanks and large wooden casks at controlled temperatures. Fermentation is followed by 24 months of aging in oak barriques.
