The Spumante Particolare Brut by Tenuta del Buonamico is a blend produced in the Cercatoia area of the municipality of Montecarlo, where the medium-textured soils provide the ideal basis for the cultivation of Pinot Bianco, Sémillon and Trebbiano Toscano. The harvest takes place at the end of August. The sparkling wine production takes place according to the Charmat method. The almost immediate post-fermentation filtration helps to preserve the original characteristics of the wine, which then continues to refine in the bottle for 4 months after a short rest in the autoclave. It has a straw yellow color embellished with greenish reflections, with a fine and persistent perlage. The olfactory profile offers delicate floral sensations, which evolve towards notes of white berry fruit and end with an accent of toasted bread. On the palate, it stands out with a marked acidity balanced by a controlled sweetness. This Brut sparkling wine is particularly suitable for accompanying fish and white meat dishes.
